After training for 4 years in Germany working in both butchers shops and restaurants, James McGeough returned to Ireland with his German wife to take over the family business in Oughterard, one of the few craft butchers in Ireland still operating their own abbatoir. James makes delicious air-dried and smoked hams, an innovative air-dried and smoked lamb made from a nine-month old Connemara lamb (which means it has lots of flavour) and even his salamis have an Irish spin; one being flavoured with rum and one with whiskey!
He makes excellent pates and corned beef; his sausages include traditional pork (plain and smoked), Chilly-Willie frankfurter-style and Connemara lamb and bacon- all within a short ride of Galway City or on the way to Connemara. Bring back to your B&B and get the frying pan out!
